Vegan cupcakes with cassava flour

Heat the oven to 200 degrees.

Procedure : melt the butter and put it aside. Wisp sugar and chia mix. Add baking powder and vanilla sugar in the mix. Add almond milk and flour. The dough will become very loose and law. Apply plant butter on muffin shape. Now pour the batter in the form about 1cm from the edge. Bake for 15-20 minutes depending on the oven.

Icing : 75 grams of plant butter (room temperature) mixed with 250 grams of powdered sugar. Add 2 tsp. cinnamon powder and stir. Apply icing once the cupcakes have cooled down.



  • 10 g plant butter
  • 3 tbsp. soaked chia seeds
  • 40 g coconut sugar
  • 45 g cassava flour
  • 45 g almond flour (freshly ground if possible)
  • 1 tsp. baking powder
  • 1 tsp. vanilla sugar
  • 1 dl almond milk
